Food: Cottage Cheese Pancakes
3 large eggs
1 cup cottage cheese
1 tsp. vanilla extract
2 Tbls. agave nectar or honey
1/2 cup flour
1 tsp. baking powder
1/4 tsp. salt
Whisk eggs, cottage cheese, vanilla, and honey in a medium bowl. In small bowl whisk flour, baking powder, and salt. Add the dry ingredients to the wet until just mixed. Cook em’ up and enjoy with your favorite pancake toppings.

Food: Chewy Butterfinger cookies
1 3/4 cups all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
1/2 cup (1 stick) butter ( or 1/4 cup applesauce and 1/4 cup butter)
1 large egg
4 full butterfinger candy bars, chopped
Preheat oven to 375F degrees.
Combine flour, baking soda, and salt in small bowl and set aside. Beat sugar and butter until creamy. Beat in egg until combined.
Gradually beat in flour mixture. Stir in butterfinger pieces by hand. Drop by slightly rounded tablespoonfuls onto ungreased baking sheet.
Bake for 10-12 minutes or until lightly browned. Enjoy!

Meatloaf is from here and is so yummy. i change it it up a bit…i don’t use pork, but italian sausage…i have also used ground turkey in place of beef. i don’t do the bread soaked milk….i use breadcrumbs and add a splash of milk. i don’t use the bacon. the relish is so good….especially the next day on a meatloaf sandwich….mmmmmmm
Kale is from here and i used Anaheim peppers and yellow onion.
and i just mashed potatoes with a ton of butter, sour cream, milk and salt :)

Food: Banana Bread
2 c flour
1 tsp baking soda
1/4 tsp salt
1/2 c butter
3/4 c brown sugar
2 eggs beaten
2 1/3 c mashed bananas (about 4-5 bananas)
Preheat oven at 350. Lightly grease 9x5 loaf pan.
Combine dry ingredients. In separate bowl cream butter, brown sugar. Stir in eggs and mashed bananas. Slowly add dry ingredients to the wet banana mixture. Pour in prepared loaf pan. Bake for 40-50 mins.

Pan-fried ham and salami until crisp . Dab oil off of meat with a paper towel. Top a few slices of ham and salami on top of fresh basil leaves. Divide 1 tablespoon of chive and onion cream cheese. Enjoy with your sweaty boobs ;)

Food: Pumpkin Chocolate Chip Cookies
1 stick butter, softened
1/2 cup sugar
1/2 cup brown sugar
1/2- 2/3 cup pumpkin (can use canned or cooked, pureed pumpkin…amount depends on how pumpkiny you want them)
1 egg
1 - 1 1/4 cup flour (if you add more pumpkin, add an extra 1/4 c flour)
1/2 tsp baking soda
pumpkin pie spices (i use the one that has everything…clove, nutmeg, cinnamon, allspice….but you can also just add cinnamon and nutmeg…about 1 tsp or more)
pinch of salt
1/2 tsp vanilla
mini chocolate chips
can you tell i made this up? it is very simple and very yummy. cream together butter, sugars, pumpkin. add egg and vanilla, beat until combined. add dry ingredients, don’t over mix. stir in chocolate chips.
bake at 350 for about 8 mins (depending on your oven…I use convention bake)
