Rub
2 cups brown sugar
1/2 cup dried mustard
1 tbs garlic powder
1 tbs paprika
1 tbs cayenne
1 tbs onion powder
1 tbs salt
1 tbs pepper
Rub the ribs on both sides 24 hours before you cook. Bake for 4 hours or until falling of the bone. Brush with BBQ sauce and sear on grill for a few minutes each side
BBQ Sauce
2 cups Ketchup
1/2 cup Water
1/2 cup Cider Vinegar
5 tbs each Brown Sugar and White Sugar
1/2 tbs pepper
1/2 tbs onion powder
1/2 tbs ground must
1 tbs woozy
1 tsp liquid smoke
1/2 tsp cumin
Bourbon-I just eye ball it!
Mac & Cheese-please have your Lipitor handy
2 cups uncooked macaroni
3 ½ Tablespoon Butter
3 ½ Tablespoon Flour
While Macaroni is cooking
Melt butter & add flour - cook for 1 minute stirring constantly
Gradually add 3 ½ cups milk - cook on medium heat until it starts to thicken - add 1 lb box of Velveeta cheese cut into cubes again stirring constantly - salt & pepper to taste. Depending on how cheesy you like it just increase or decrease cheese.
Pour into a casserole & top with buttered bread crumbs. Bake 350 for 15 - 20 minutes

1/2 cup water
1/3 cup uncooked whole wheat cous cous
1 TBS water
3/4 ts salt
1/4 ts black pepper
(Additional spices if you like, recommend: cumin, chili powder)
4 large egg whites
3 large eggs
Cooking Spray
2 cups bell pepper strips
1 cup thinly vertical sliced onion
2 garlic cloves, minced
1/3 cup (1 1/2 oz) Pepper Jack Cheese or other
Preheat oven to 350 deg.
Bring 1/ 2 cup of water to boil
Add cous cous, stir. Remove from heat; cover and let stand for 5 minutes; fluff with fork
Combine 1 ts water, salt, pepper, egg whites, and eggs in a medium bowl; stir with a whisk
Heat a 10-inch oven proof non-stick skillet over medium high heat; coat with cooking spray.
Add bell pepper, onion, and garlic; saute for 5 minutes. Stir in egg mixture and cous cous and cook over medium heat 5 minutes or until almost set.
Sprinkle with cheese.
Bake at 350 deg. for 10-12 minutes. Let stand 5 minutes before serving.

For orzo:
Boil desired amount of pasta. Throw fresh spinach into the boiling water with pasta a minute before draining….drain pasta and spinach and add olive oil, garlic, a bit of butter, and feta. Salt and pepper. Toss in toasted pine nuts.

Food: Chocolate cake with chocolate frosting
Beatty’s chocolate cake
1 3/4 c flour
2 cup sugar
3/4 c cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp kosher salt
1 c buttermilk
1/2 c vegetable oil
2 eggs
1 tsp vanilla
1 cup freshly brewed hot coffee
preheat oven to 350
butter and flour two 8 in round cake pans
mix together all dry ingredents. in seperate bowl combine buttermilk, oil, eggs, and vanilla. slowly add the wet to the dry ingredients. with mixer still on low, add the coffee and stir just to combine (make sure you scrape the side and bottom of bowl)
bake 35-40 min. cool in pan 15-20 min, then turn out onto a cooling rack.
For frosting…
Melt about a cup or so of whatever chocolate you like in a heavy pan. I did a mix of unsweetened with bittersweet and some semi sweet chips. Let cool. In mixing bowl, beat 1 stick butter (plus 1-2 tbsp) with about a tbsp milk. When combined and fluffy, add melted chocolate and beat until smooth and light. Add about 1-2 c powdered sugar to your desired taste and thickness :) add a splash of vanilla and some sea salt. Yum.
